On 4th July 2009, I was scheduled to give a talk in Tanjong Pagar Community Centre at Cantonment Road. The topic of the talk was on eye diseases: "中医对白内障、青光眼、老年性黄斑病变及夜盲症的诊治". One of the journalists from the SPH noticed the announcement of the talk on the 联合早报. She was actually looking for a TCM physician who can help in writing an article in one of her magazine “1UW”. She interviewed me in my clinic and I provided some information on some eye diseases (she needed some information from the TCM points of views).  The article was published in “1UW” No. 188 series dated 13 July 2009. The Name of the article was “新加坡常见眼睛疾病”. During her interview with me, I mentioned to her that cooking is also my hobby and showed her some of my recipes which I organized in a book. She was impressed and invited me to write for Lianhe Wanbao 联合晚报 on a weekly basis and I agreed.

Until to-date, I have already written 117 recipes for Lianhe Wanbao联合晚报 and they were published on Sundays from 2nd Aug 2009 to 2nd Dec 2012.

 药材鸡汤 Herbal Chicken Soup


材料 Ingredients:
黑鸡2, 党参20, 吉林人参15, 当归4, 玉竹20, 构杞子10, 红枣20, 山药20
Black chicken 2 pcs, Dangshen 15 gms, Danggui 4 gms, Yuzhu 20 gms, Wolfberries 10 gms, red dates 20 gms, Chinese Yam.

煮法Methods:
先把玉竹、 山药用烧水烫一下,再用自来水冲洗后泡软;
  Blanch Yuzhu, Chinese Yam with hot water, then soak in tap water for a while till it is soften;
黑鸡去皮,切成4;
    Peeled the black chicken and chop each chicken into four big pieces;
锅里把4水煮滚后,加进黑鸡, 党参, 吉林人参, 当归, 玉竹,红枣,淮山;
    Add four bowls of water in a pot, bring to boil, add Dangshen, Danggui, Yuzhu, red dates & Chinese Yam.
45~60分钟, 然后加入杞子和少许盐即可.
    Continue to boil for 45~60 minutes, add Wolfberries and a pinch of salt.
  
药材鸡汤的营养价值
药材鸡汤有补益气血,保健强身的作用,全家老少都适宜, 产后妇女可多服.
感冒,咳嗽,发烧皆不宜服用.
Benefits of Herbal Chicken:
Herbal Chicken soup helps to increase vitality and nourish blood, good for physical health. 
Suitable for the whole family including the young & old and post-natal woman.
Not advisable to take when one has cough, cold and fever.

第2道菜肴--核桃玉米汤Walnuts Corn Soup****


 猪骨肉200g, 猪骨肉需要先汆烫5分钟. Pork bones 200g, 
blanch pork bone before hand.
 玉米 1玉米,切成5.
Corn 1 pcs,  cut into 5 smaller pieces;
 南瓜200g, 切成10. Pumpkim 200g, cut into 10 smaller pieces;

 黑木耳10g: 先把黑木耳用自来水冲洗后泡软
Black fungus 10g, soak black fungus in the water till soften;

 马蹄10,马蹄洗刷干净, 用小锤敲击一下, 使出味
Water chestnut 10 pieces, wash well, hammer a little so that 
the flavor/essence can come out;
 核桃9~10, Walnuts 9 pcs.



锅里加4碗水,放入几片生姜,猪骨肉和玉米先煮30分钟
再加入核桃黑木耳,  马蹄煮30分钟最后加南瓜煮20分钟.
然后加入少许盐即可

              核桃玉米汤Walnuts Corn Soup

  煮法:
  锅里加4碗水,放入几片生姜,猪骨肉和玉米先煮30分钟, 再加         
  入核桃, 黑木耳马蹄煮30分钟. 最后加南瓜煮20分钟.
  然后加入少许盐即可

Cooking Methods:
Firstly add 4 bowls of water into a pot, add a few slices of ginger, pork bone (blanched first) and corn, boiled for 30 minutes, then add walnuts, black fungus, water chestnuts and cook for 30 minutes. Finally, add pumpkin and cook for 20 minutes. Lastly add a dash of salt.

Based on reports by researchers, the benefits of the above ingredients are as follows :   
根据各方面的研究报道材料的营养价值是如下:


核桃玉米汤:从材料的功效来分析,此汤可能有增强记忆力,补脑降胆固醇,预防高血压,动脉硬化,适合年长者 (但必须常服才有效)
  
功效:
核桃Walnut:
核桃能够补脑,改善脑循环,增强脑力。同时还有乌发、使皮肤光润的作用。

南瓜Pumpkin:
南瓜含有丰富的碳水化合物,具有强化体内粘膜和增加皮肤抵抗力的功效,南瓜还有预防脑溢血和具有抗癌的作用。

黑木耳Black Fungus:
黑木耳含有很高的铁,20倍高过芹菜, 7倍高过猪肝。 能防止缺铁性贫血。黑木耳也有降低血液凝块,防止血栓形成,预防心脏病和中风。

荸荠(马蹄) Water Chestnuts
荸荠为低酸性、低蛋白质、含磷质、   酶质、卡洛里、维他命 C,有清凉利尿,降血压促进消化功能。
     
玉米Corn :
玉米有降脂活血的作用:玉米中的脂肪50%以上为亚油酸,能减少胆固醇在血管壁的沉积、使血液中的胆固醇保持正常,有活血、降脂的作用,长期食用对高血压、冠心病、动脉硬化、增强记忆的功效等心、脑血管疾病有辅助治疗作用。

第3道菜肴--马蹄番茄汤Water Chestnut Tomato Soup ****


3~4人份
Serves 4 persons

生姜 8片,蒜头5~6 
Ginger 8 pcs, Garlic 5~6 pcs

猪骨肉200克,先汆烫猪骨肉5分钟.
Pork Bones 200g, blanch for 5 minutes.

洋葱2,切片
Big Onion 2 pcs  

粉葛(葛根)200,切成半圆形,1cm 的厚度
Fen Ge (Pueraria) 200g, Cut half circle, 1cm thickness;

荸荠(马蹄) 6,干净后,切皮,用小锤轻敲一下使出味;
Water chestnuts 6 pcs, wash clean, peel off the skin, hammer a little; 

无花果8
Wu Hua Guo (Ficus carica) 8 pcs 
 
番茄3,每粒番茄切成4~5;
Tomato 3 pcs, cut into 4~5 pcs; 



 先汆烫猪骨肉5分钟;
② 锅里4碗水加入生姜、蒜头、洋葱和猪骨肉30分钟;
  加入无花果粉葛和马蹄再煮30分钟;
④ 最后加入番茄煮10分钟加入少许盐与胡椒粉即可;


马蹄番茄汤Water  Chestnut Tomato Soup 

煮法:
  先汆烫猪骨肉5分钟;
② 锅里4碗水, 加入生姜、蒜头、洋葱和猪骨肉30分钟:
  加入无花果粉葛和马蹄, 再煮30分钟;
最后加入番茄煮10分钟, 加入少许盐与胡椒粉即可;

Method:
 Blanch the pork bone first;
Add 4 bowls of water into the pot, add ginger, garlic, onion and pork 
       bone,cook for 30 minutes; 
Add wu hua guo (ficus carica), fen ge and water chestnut, cook for 
      another 30 minutes;
 Lastly add tomatoes, cook for another 10 minutes, add a dash of salt 
      and pepper. 


功效:
蕃茄Tomato
蕃茄性凉味甘酸含天然胺基酸,还有丰富的维他命A B2CK等营养素。蕃茄中含有的酵素能促进整肠作用,净化血液,可帮助体内毒素排泄出来。蕃茄还可帮助脂肪消化,减轻肝脏负担,患肥胖症、动脉硬化、糖尿病、前列腺病和皮肤病者应多食。

无花果Ficus carica: 
无花果性平、味甘。具有健胃清肠、消肿解毒、防治肿瘤的功效。无花果有润肠通便,用于消化不良、腹胀、大便秘结的功效。

粉葛 Pueraria: 
粉葛性凉、味甘有清热解表、生津、止渴的功效粉葛也可以降血压,托痈疽、抗老防癌之功效.

洋葱Big Onion: 
洋葱性平,味甘、辛,具有健胃消食、有平肝、润肠、利尿及发汗的作用。它含蛋白质、钙、磷、铁、硒、胡萝卜素等多种营养成分。   它具有降血糖、降胆固醇、降血压等的功能。

荸荠(马蹄) Water Chestnuts
马蹄性清凉,味甘,水分充足,爽脆可口。 有清凉利尿,降血压促进消化功能。含磷质、卡洛里、维他命 C等。

       第4道菜肴--葛根雪梨汤 Pueraria Pear Soup****





3~4人份
Serve 3~4 persons

 白木耳5,用自来水泡软去水;
    White fungus 5g, soak in water to soften
粉葛200,切成半圆形,1cm 的厚度;
     Fen Ge (Pueraria) 200g, cut like a half circle, 1cm thickness;
玉米2,切成5~6, 去皮取玉米须留用;
    Corn 2 pcs, peel off the skin, cut into 5~6 pcs,
2,切片
    Onion 2 pcs, cut into smaller pieces;
红罗卜1,切成6~7
    Red carrot 1 piece, cut into 6~7 pieces
日本梨2, 每粒切成8;
    Japanese pear 2 pcs, cut into 8 pcs
 
猪骨肉200g,先汆烫猪骨肉5分钟,
    Pork bone 200g, blanch for 5 minutes.



1) 锅里4碗水加入玉米与粉葛30分钟,
2)然后加入洋葱、红罗卜白木耳雪梨再煮30分钟,
3)最后加入少许盐与胡椒粉即可;
1) Add four bowls of water, add corn and  Fen Ge (Pueraria), cook for 30 
 minutes,
2) add onion, carrot, white fungus and pear, cook for another 30 minutes.
3) Lastly, add a dash of salt and pepper.



葛根雪梨汤 Pueraria Pear Soup


Ingrediants:
Onion 2 pcs, Fen Ge (Pueraria) 200g, carrot 1 pc, white fungus 5g, corn 2 pcs, pork bone 200g;
材料: 洋葱2粉葛200红罗卜1雪梨2 白木耳5 玉米2玉米须2猪骨肉200g

①洋2,切片;
    Onion 2 pcs, cut into smaller pieces;
粉葛200,切成半圆形,1cm 的厚度;
     Fen Ge (Pueraria) 200g, cut like a half circle, 1cm thickness;
红罗卜1,切成6~7;
    Red carrot 1 piece, cut into 6~7 pieces;
日本梨2, 每粒切成8;
    Japanese pear 2 pcs, cut into 8 pcs
白木耳5,用自来水泡软去水;
    White fungus 5g, soak in water to soften
玉米2,切成5~6, 去皮取玉米须留用;
    Corn 2 pcs, peel off the skin, cut into 5~6 pcs,
猪骨肉200g,先汆烫猪骨肉5分钟,
    Pork bone 200g, blanch for 5 minutes. 

 煮法: Method:
1) 锅里4碗水加入玉米与粉葛30分钟,
2)然后加入洋葱、红罗卜白木耳雪梨再煮30分钟,
3)最后加入少许盐与胡椒粉即可;

根据各方面的研究报道, 材料的营养价值是如下:


葛根雪梨汤有健胃、请热润肺、 生津止渴的功效老少合宜适合肺热咳嗽、眼睛干涩和皮肤干燥者。

功效:
洋葱 Big Onion: 
洋葱性平,味甘、辛,具有健胃消食、有平肝、润肠、利尿及发汗的作用。它含蛋白质、钙、磷、铁、硒、胡萝卜素等多种营养成分。   它具有降血糖、降胆固醇、降血压等的功能。

粉葛 Pueraria: 
粉葛性凉、味甘有清热解表、生津、止渴的功效粉葛也可以降血压,托痈疽、抗老防癌之功效.

红罗卜 Red Carrot
红萝卜含有丰富的维生素及钙质,对美容与健康大有助益它具有降压、强心、利尿、抗炎、抗过敏的功效红萝卜对视力保健很有益处。

雪梨 Pear
雪梨味甘性寒,含维生素和矿物质,汁多味美。还含有机酸、维他命BC及丰富的水份,具生津止渴、清热、润肺,滋润肌肤之功效。

白木耳 White Fungus:
白木耳味甘,性平。它含有蛋白质、脂肪、碳水化合物、粗纤维、钙、磷、铁、钾、维生素经B1、维生素B2、维生素D等,营养价值很高。  它具有润肺生津、补肾健脑、健身嫩肤的功效.  不仅可健胃通肠,更能降低血糖。

玉米 Corn :
玉米其味甘淡,其性平和。它有降脂活血的作用:玉米中的脂肪50%以上为亚油酸,能减少胆固醇在血管壁的沉积、使血液中的胆固醇保持正常,有活血、降脂的作用,长期食用对高血压、冠心病、动脉硬化、增强记忆的功效等心、脑血管疾病有辅助治疗作用。

玉米须
玉米须也作为中药用。主要用于利尿消肿清热通淋的功效。可降底血压,降血糖的作用。

  第5道菜肴-- 牛肉烤马铃薯 Shepherd Pie *****







第一步 - - -   炒牛肉加蒜头, 洋葱, (玉米+红罗卜+豌豆   
First Step --- Fry Beef with garlic, big onion, mix vegetable.


黄豆油3½ 汤匙,
蒜头20克,剁碎,
洋葱200克,
(玉米+红罗卜+豌豆200克.
Soya Bean Oil 3½ tbsp, 
Garlic 20g, minced,
Onion 200g, cut into smaller pieces, 
mixed vegetables (corn, carrot and peas).

牛肉 -–300克,剁碎
Beef with tendon 300g, minced.
先用黄豆油把蒜头、洋葱炒熟
Fry garlic and onion with soya bean oil till fragrant.
加进牛肉
Add beef (already minced).
加进玉米、红罗卜、.
Add corn, carrot and peas.
炒到半熟.
Fry till half cooked. 

Add the following sauces:
加入调味料:
Bay leaves半茶匙,Rosemary leaves 茶匙,Ground thyme半茶匙,黑糊椒½ 茶匙, 番茄酱--4汤匙,1/3茶匙½茶匙,
红酒2汤匙和玉米粉 -- 1汤匙4汤匙.
Add Bay leaves ½ tsp, rosemary ½ tsp, ground thyme ½ tsp, black pepper ½ tsp, tomato sauce 4 tbsp, a dash of salt, sugar ½ tsp, 2 tbsp of red wine and 1 tbsp of corn starch (mixed with 4 tbsp of water).

把全部的调味与炒半熟的牛肉调均然后放入1½寸高不锈钢的盘子里,备用.
Add all the above spices to the half-cooked beef, then put it into a 1½” stainless tin. 

第二步- - - 马铃薯捣烂调味,然后涂抹在牛肉面上, 烘烤即成.
Second Step--- Preperation of Potatoes, to place above the beef and bake.
500马铃薯先煮,然后捣烂.
Potatoes 500 g, cook till it is soften, mashed.
马铃薯捣烂后, 鲜牛奶--2汤匙.
Add 2 tbsp of milk into the mashed potatoes
加盐1/3 茶匙,牛油 20克、糊椒粉少许.
Add a dash of salt, butter 20g and a little pepper to the mashed potatoes
在牛肉面上涂抹一层马铃薯,然后撒上paprika.
Place the potatoes above the half-cooked beef in the tin. On top of the mashed potatoes, sprinkle some paprika powder to add more flavor to it.
放进烘炉以200 ºC烘烤小时.
Then bake at 200 ºC for half an hour.





 

 牛肉烘烤马铃薯已可食用.
The Shepherd Pie is ready to serve.

那些不吃牛肉者, 亦可改用鸡肉, 可用酱青、黑酱油、蚝油,糖各一茶匙,花彫酒1汤匙浸腌, 玉米粉1汤匙,4汤匙。上面涂抹一层马铃薯,烘烤后撒上辣椒粉即可。
For those who do not eat beef, can substitute beef with chicken, add light sauce, dark sauce, oyster sauce and 1 tbsp of  Shaoxing rice wine, add corn starch 4 tbsp.  Place a layer of potatoes, sprinkle with some chili powder and bake.


中医认为牛肉有温煦、补中益气、滋养脾胃、强健筋骨的功效。适用于宗气不足、气虚体弱、筋骨酸软、贫血久病者食用。寒冬食牛肉,有暖胃御寒的作用。
中医认为马铃薯性平味甘,具有和胃调中、益气健脾、强身益肾等的功效,可辅助治疗消化不良、习惯性便秘、神疲乏力等症。
提醒马铃薯宜去皮,有芽眼的部分应挖去,以免中毒。

第6道菜肴--冬菇腊肠鸡饭Mushroom Sausage Chicken Rice




Ingredients and Cooking Methods

白鸡1 支, 切块.
One whole chicken, cut into smaller pieces.
加调味料:黑酱油、酱青、麻油、蚝油各2汤匙,把鸡浸腌2小时.
Add sauce: dark sauce, light sauce, sesame oil, oyster sauce, each 2 tbsp. Use the sauce to marinate the chicken for 2 hours.
 冬菇15,切半.
Mushroom 15 pcs, cut into half each.

洋葱2个切块.
Big onion 2 pcs, cut into smaller pcs.
腊肠—2,每块约3里米宽.
Chinese sausage 2 pcs, cut slant, each 3mm thickness.
 3汤匙的食油, 把洋葱与腊肠炒香
Use 3 tbsp of cooking oil to fry big onion and sausage till fragrant. 

 加上冬菇.
Add mushroom.

加上已腌好的鸡炒至半熟. 备用.
Add the marinated chicken, fry till half cooked. Set aside.
 干辣椒 3条切小块.
Dry chili 3 pcs, cut into smaller pieces.
2汤匙的食油, 8粒蒜头、生姜6片,虾米40克与干辣椒3条炒香.
Use 2 tbsp of cooking oil, fry 8pcs of garlic, ginger 6pcs, dried shrimps 40g and dried chili till fragrant.
加入白米,炒至半熟.
Add the rice, fry till half cooked.
 
加进适量的水.
Add in the right amount of water.

然后加入炒过的鸡.
Add in the chicken mixture.

用电饭锅煮熟.
Use the rice cooker to cook.
每十分钟搅均一次.
Stir the rice every 10 minutes.


       冬菇腊肠鸡饭Mushroom Sausage Chicken Rice


冬菇腊肠鸡饭美味可口,适宜全家老少。鸡肉具有温中益气、补精填髓、益五脏、补虚损的功效。冬菇有增加免疫力,抗癌与降胆固醇的功效。冬菇含有18种氨基酸,7种人体必需氨基酸,同时它还含有30多种酶以及葡萄糖、维生素A。但是要留意,菇類「嘌呤」(purine 含量甚高,患有痛風人士 (Gout Disease) 宜適量進食。腊肠每100克含584 大卡的热量,减肥者可适量减少。

P/S: Please note that some of the skins of chicken can be striped off but not all as the skin of chicken adds a lot to the taste.

第7道菜肴-- 红烧猪肉 Roast Pork  




猪肉 三层肉– 1 公斤.
先把猪毛用小火烧掉.
Pork Belly 1 kg.  Use small fire to burn away the hair in the skin.

5分钟,去水. 然后用刀横切几条开口,使调味品易于渗透进去以及烘烤时比较快熟.
Blanch the pork belly and cut a few slices on it so that the sauces can seep in and also the pork can be cooked more readily.

用白醋搽猪皮表面,再用尖头针刺皮表,烘烤后使酥脆.
Apply some white vinegar onto the skin, then use a sharp object to poke the skin, so that after baking, the skin can be crunchy. 

用风扇吹两小时,使猪皮酥脆
  Use the fan to blow for 2 hours, so that the skin can be crunchy


调味料:
五香粉2茶匙、盐3/4茶匙、白糖2茶匙、蚝油3汤匙、麻油½茶匙、黑糊椒粉1茶匙.和白糊椒粉½茶匙, 腌浸3小时。
Sauces: 
Five spices 2 tsp, salt ¾ tsp, sugar 2 tsp, oyster sauce 3 tbsp, sesame oil ½ tsp, black pepper ½ tsp, white pepper ½ tsp.


腌浸时间至少2小时.
Marinate for two hours.

先把烤炉预热15分钟.
Preheat the oven for 15 min.



把猪肉放进烤炉,250ºC烘烤45~60分钟烘烤时猪皮向上烘烤后,用刀刮掉猪皮表面焦黑的部分.
Bake the pork belly with the skin side up in the oven and bake at 250ºC for 45~60 min. Use the knife to scrape off the charred surface of pig skin.




红烧猪肉配辣椒甜酱,美味可口.
Eat the pork belly with chili sauce.  It is very delicious.


烹饪贴士: 必须加上五香粉调味, 腌浸时间至少2小时,才会香美可口。烘烤时猪皮向上. 若要猪皮酥脆可烘烤久一点,2小时,然后用刀刮掉焦黑的部分.


猪肉性平和,不温不燥,是餐桌上的佳品, 它有补血的功效, 含丰富的蛋白质和脂肪酸,故体虚贫血者尤为适合。猪肉纤维较为细软,因此烹调加工后肉味特别鲜美,只是肥嫩部分应少吃。

辣椒螃蟹 Chili Crab

螃蟹2支 Two Crabs




螃蟹放在半寸高的水中(最好加半茶匙盐). 直到要吃之前才杀死.

Keep the crabs in a pail with 1½” of water in it (best is to put ½ tsp of salt in it). Kill the crab when it is ready to eat.


螃蟹2, 用刀插死螃蟹,然后用牙刷洗刷干净.
Two big crabs. Use knife to kill it. Then brush it clean.

用剪刀剪掉其膀胱.
Use scissors to cut away its bladder.

去掉头部与其鳃.

Cut away the head and the gill.


把螃蟹切块,敲破钳子,用油快速过一过,把微生物杀死, 同时蟹肉也比较结实,捞起备用.

Cut the crabs into smaller pieces, crack the pincers slightly, then blanch quickly in oil to kill all the germs and the meat is firmer.



调味料: 辣椒酱半瓶、 番茄酱半瓶、 酱青2茶匙、 胡椒粉少许. 再加1杯水调均备用.
Sauce: Chili sauce  ½ bottle, tomato sauce ½ bottle, light sauce 2 tbsp, 
a dash of pepper, 1 cup of water.




蒜头1, 切碎备用.
Garlic, 1 bulb, minced


洋葱1切碎备用.
big onion, 1 pc, minced


2粒鸡蛋,搅均,加酱青1茶匙.
Two eggs, beat well, add 1 tsp of light sauce.


锅里放2汤匙油, 把蒜头与洋葱炒香,加入螃蟹,10分种. 然后加入辣椒酱与番茄酱等.

Add 2 tbsp of oil in the wok, fry garlic and onion till fragrant, put in the crabs and fry them for 10 min, then add the sauces.

最后加入鸡蛋,就可以了
Lastly add well-beaten eggs.




螃蟹乃为食中珍味,素有一盘蟹,顶桌菜的民谚。它不但味美,且营养丰富。螃蟹含有丰富的蛋白质、微量元素等营养,对身体有很好的滋补作用。螃蟹有清热解毒、补骨添髓、养筋活血,利肢节,滋肝阴,充胃液之功效。 螃蟹,虽然味道鲜美,其性寒凉,故脾虚胃胀者少吃。另皮肤病患者也应少吃。 



另由于螃蟹是在淤泥中生长的,体内往往带有一些毒素,为防止这些致病微生物侵入人体,在食用螃蟹时一定要蒸熟煮透。根据螃蟹大小,煮约15~20分钟.



在挑选螃蟹时,以鲜活为上品。可以参考以下几点: 

1.  挑选时先触摸螃蟹的眼睛,反应比较灵敏者说明其鲜活。也可以将其翻转肚皮朝上,看其是否可以自己翻转过来,来判断它是否足够健康鲜活。 

 2.将蟹拿在手里掂,手感沉重的为肥大壮实的好蟹,手感轻飘的多是干瘪肉少的劣蟹。

 3.将螃蟹置于阳光或灯光下观察,蟹盖边缘不透光的则说明螃蟹肥满,若透亮缝隙可见,则螃蟹肉少。

第9道菜肴




Ingredients and Cooking Methods

白鸡一支,切成大块几个.
One white chicken, chop into medium size.


用以下的调味料腌浸2小时. 大块的鸡腿切几条开口,使入味.

Use the following sauces to marinate for two hours. Slice a few cuts on the chicken drumstick,so that the sauces can penetrate into the meat.


调味料: 蒜头1大粒、小葱头8粒、酱青1汤匙、蚝油2汤匙、
生姜6片、糖半茶匙和糊椒粉少许.
Sauces: garlic 1 bulb, shallot 8 pcs, light sauce 1 tbsp,
oyster sauce 2 tbsp, ginger 6 pcs, sugar ½ tsp and a dash of pepper.


用面包纸,剪成大小约 9”x 10” 的纸张.
Cut a few pieces of greaseproof paper, size 9”x10.



面包纸把腌好的鸡块包起来.
Wrap the seasoned chicken with the greaseproof paper.



锅里倒入两碗的食油, 烧热把鸡块煎熟.
Pour two bowls of cooking oil in the wok and heat up the oil. Fry till the chicken is cooked.








纸包鸡 Paper-wrapped Chicken


纸包鸡有滋补作用, 味鲜美,适合全家大小。纸包鸡因用纸包住, 使其香甜的味道不会散失, 同时与油间隔了一层, 煎出来的鸡比较不回会燥热。在烧烤会(barbecue) ,用锡箔纸包鸡肉可避免吃进致癌物质。据报道,肉直接在高温下进行烧烤,会产生一种叫苯并芘的致癌物质。如果经常食用被苯并芘污染的烧烤食品,致癌物质会在体内蓄积,有诱发胃癌、肠癌的危险。

鸡肉的肉质细嫩,滋味鲜美,它含蛋白质、钙、磷、铁和维生素A等,有滋补养身的作用。鸡肉的性味甘温,有温中益气、补精添髓、强筋健骨、活血调经的功效。除了鸡皮、鸡油含脂肪高之外,其肉多为不饱和脂肪酸。所以鸡肉是高蛋白、低脂肪的珍贵食品。

花生眉豆煲凤爪汤
第10道菜肴

猪骨400,汆烫一下


小鱼(selar kunning) 8,去掉内脏,用布包裹,使翅片不会散在汤里


蒜头6~7


姜片— 6~7 

花生 70,泡水.

眉豆70,泡水.
红枣30,泡水.

红罗卜200,切块.
南瓜300 切块. 
鸡脚20, 剪掉爪尖, 剥皮,然后用食盐洗擦,再用油爆过, 浸泡在水中使膨胀.


先煮花生、眉豆、猪骨、鸡脚、小鱼、姜片熬1小时, 然后加
南瓜、红萝卜、红枣和少许盐再熬15分钟, 撒上一点糊椒粉即可。




花生眉豆煲凤爪汤, 营养价值高, 味道甜美,适合全家人。从其材料的营养提示它有健脾养胃,帮助消化,降低胆固醇、抑制高血压与降血糖的作用。这一道汤, 不用鱼骨, 改用小鱼(selar kunning) ,因其价格廉宜, 营养更佳。



眉豆的功效:

眉豆味甘、性平、咸; 具有健脾、止渴、补肾、生精髓的功效;

1. 眉豆提供优质蛋白蛋及多种维生素、微量元素等;


2. 眉豆所含维生素B1能帮助消化,增进食欲;

3. 眉豆的磷脂有促进胰岛素分泌,是糖尿病人的理想食品。


花生的功效:

花生有健脾养胃、疏通血脉、延年益寿之功效。花生所含脂肪的绝大部分都是不饱和脂肪酸, 有降低胆固醇、降压的作用可,对心血管疾病有很好的预防作用。同时花生属于高热量、高蛋白、高纤维食物,可以增加饱腹感,引起的饱腹感是其他高碳水化合物食物的5倍,所以有减肥效果。但它是一种坚果,不容易消化, 最好是煮汤喝.



南瓜的功效:

现代医学研究指出:南瓜果实中有7%~17%的果胶,其吸附力很强,能保护消化道粘膜,对消化道溃疡有一定疗效,还能粘结胆固醇,防止动脉硬化。南瓜果肉内有一种特殊物质,可促进胰岛素分泌,降低血糖,对防治糖尿病有特效。南瓜可有效防止高血压,预防脑溢血和具有抗癌的作用。



红枣的功效:

红枣是滋补良药,有强筋壮骨、补血行气、滋颐润颜之功效。



鸡脚的功效:

鸡脚有理气补益,生津健脾的功效。它含有丰富的钙质及胶原蛋白,多吃不但能软化血管,同时具有美容功效。有研究发现,鸡爪中含有四种蛋白质成分能够有效抑制高血压。

牛肉番茄汤 Beef Tomato Soup
第11道菜肴

巴西牛肉 (冷藏牛腩肉)500


巴西牛肉切片, 沾一点玉米粉搓揉牛肉,使滑嫩.

番茄2,马铃薯2,红罗卜1, 全部切块.


先油炒蒜头、姜和洋葱.


加入牛肉炒香. 然后加4碗水,放进陶瓷锅里焖煮.


 加进黑酱油1汤匙、酱青1汤匙、蚝油2汤匙、麻油1茶匙.

 然后加4碗水与调味料, 翻炒一下,放进陶瓷锅里焖煮.


焖煮1小时后加马铃薯,半小时后加红罗卜,15分钟后加番茄



最好用高压锅煮, 可缩短1小时.




最后加1汤匙番茄酱与半茶匙花彫酒即可.


牛肉番茄汤已可上桌 Beef Tomato Soup 


牛肉含有丰富的蛋白质和氨基酸,能提高机体抗病能力,对孩童生长发育及手术后补充失血等方面有辅助的作用。同时牛肉有暖胃作用,为寒冬补益佳品。牛肉适用于宗气不足、怕冷、身体虚弱、筋骨酸软、久病贫血的人食用。但必须注意在感染疾病时或患皮肤病时慎食。

番茄
番茄中含有糖类、维生素CB1B2、胡萝卜、蛋白质和磷、钙等人体必须元素。番茄还含有较多苹果酸、柠檬酸等有机酸,能保护维生素C不被破坏,还能软化血管、促进钙、铁元素的吸收,帮助脂肪消化,减轻肝脏负担

红萝卜
红萝卜含有多种维生素外,还蕴藏丰富的钙、钾、铁等物质。它对能使眼睛明亮、提高视力,促进儿童生长发育,降低血脂,增强人体免疫等功能有显著作用。


贴士:

牛肉不易熟烂,焖煮时间要2小时,最好用高压锅煮, 可缩短1小时。烹饪时放一块橘皮可以使其易烂。

Spare-Ribs Braised with Bitter Gourd 苦瓜焖排骨
第12道菜肴



Ingredients and Cooking Methods

排骨9~10 用黑酱油腌制半小时 
苦瓜一条
把苦瓜切成长方形
同食盐搓揉苦瓜,然后用1汤匙盐浸在水里约半小时,使苦味去掉,
生姜6~7,蒜头5~6
先用油炒香蒜头与生姜;
 加入豆酱1~2汤匙
 加入排骨
 加入苦瓜


 加入调味酱: 蚝油,黑酱油各1汤匙与胡椒粉少许



焖煮40分钟~1小时

最后倒入玉米粉1汤匙(先调少许水), 调均即可.



Spare-Ribs Braised with Bitter Gourd 苦瓜焖排骨


苦瓜焖排骨具有清热消暑、养血益气、滋肝明目的功效.
天气热,吃苦瓜可清暑去热虽然苦瓜味苦, 但因焖煮时间久,其味道已不苦
苦瓜含有丰富的维生素BC、钙、铁等。苦瓜熟食性平,生食性寒,因此脾虚者或胃胀时不宜生吃。此外,孕妇也应慎食。据研究发现,苦瓜对糖尿病与预防癌症有一定的功效。
